    Ingredients

    • 150G TOMATOES
    • 2 EGGS
    • 80G FETA CHEESE
    • 1/2 CUP MINOS OLIVE OIL
    • DRIED OREGANO
    • SALT AND FRESHLY GROUND PEPPER

    Directions

    Chop the tomatoes and place them in a large saucepan with MINOS olive oil. Cook for five minutes over high heat. Add salt, pepper and oregano. Beat the eggs together in a bowl, crumble the feta cheese and add it to the mix in the saucepan. Serve in a small metal pan with two small toasted baguettes, fried rocket, cherry tomatoes, some feta and oregano.
