    CHEESE CROQUETTES WITH TOMATO JAM

    Ingredients

    • 250G ALL-PURPOSE FLOUR
    • 330ML COLD ALE
    • 1TSP BAKING POWDER
    • 100G DIVANIS FETA CHEESE
    • 20ML MINOS OLIVE OIL

    FOR THE JAM

    • 2 TOMATOES CHOPPED AND PEELED, WITHOUT SPORES
    • 80G ATTIKI HONEY
    • 1 VANILLA
    • ZEST FROM 1 LEMON

    PAIRED WITH SKINOS MASTIHA SPIRIT
    DECORATED WITH PARSLEY

    Directions

    In a bowl pour the flour, baking powder and cold ale. Stir well and leave the mixture for half an hour in the fridge. In a pan pour the tomatoes, add 1 vanilla and the lemon zest. Pour ATTIKI honey and let the mixture simmer, stirring frequently for 20 minutes. Add DIVANIS feta cheese to the flour mix and stir well. Pour MINOS olive oil in a pan, make small puffs from the mix and fry for 2-3 minutes. Spread the tomato jam and place the croquettes on top. Sprinkle with parsley and pair with SKINOS mastiha spirit.
