    SANTORINI FAVA WITH CARAMELIZED ONIONS

    Ingredients

    FOR THE FAVA:

    • 250G SPLIT PEAS
    • 100G CARROT
    • 100G ONION
    • 1500ML WARM WATER
    • 40ML MINOS OLIVE OIL
    • 1G TURMERIC
    • SALT AND PEPPER

    FOR THE CARAMELIZED ONIONS:

    • 1KG ONION IN THIN SLICES
    • 80G BUTTER
    • 20ML MINOS OLIVE OIL
    • 100G ATTIKI HONEY
    • 100ML WHITE WINE
    • 50ML BALSAMIC CREAM
    • SALT AND PEPPER

    SERVE WITH 1 CHERRY TOMATO

    Directions

    Chop the onion and the carrot. Pour MINOS olive oil into a non-stick hot saucepan. Sauté the onions and carrots for 4-5 minutes. Give a stir. Add the split peas and the turmeric and mix well. Sauté for 2 minutes and pour the hot water. Add salt and pepper. Let the mix simmer for 20 minutes and keep stirring. When the mix is mashed and thick, switch off the heat. Use a food processor to make it smooth and silky. To make the caramelized onions, chop the onions in thin slices and pour MINOS olive oil in a non-stick pan. Sauté the onions over medium heat. Stir frequently and let the onion brown. After 10 mins add the butter and pour the white wine and the ATTIKI honey. Stir well for 10 minutes and add balsamic cream. Stir well until the mix is brown and sticky. Serve the fava over the caramelized onions and add a cherry tomato.
