    PENNE PASTA WITH SUN-DRIED TOMATOES, MUSHROOMS AND CHICKEN FILLET

    Ingredients

    • 1 PACK MISKO SHORT CUT PENNE
    • 80G DIVANIS KASSERI
    • 20ML MINOS OLIVE OIL
    • 1 CHICKEN BREAST FILLET IN CUBES
    • 30G ALL-PURPOSE FLOUR
    • 200G FRESH MUSHROOMS, SLICED
    • 8 SUN-DRIED TOMATOES, FINELY CHOPPED
    • 50ML RED WINE
    • 50ML CREAM
    • 100ML CHICKEN BROTH
    • 5G THYME
    • 5G OF OREGANO
    • SALT AND PEPPER

    Directions

    Chop the mushrooms into slices. Boil the short cut penne in a pot. Grate the DIVANIS kasseri, chop the chicken fillet in cubes and cover it in flour. In a large, heated pan, pour MINOS olive oil and sauté the chicken. After it gets a golden hue, add the mushrooms and keep stirring. Add the sun-dried tomatoes, stir for a few seconds and douse with red wine. After the alcohol has evaporated, add cream, chicken broth, thyme, oregano, salt and pepper and boil for about 10 minutes. After the sauce is done, add the pasta and the grated kasseri, mix well and serve.
