    SPAGHETTI AND EGGPLANTS FROM FLORINA, BALSAMIC AND FETA CHEESE

    Ingredients

    • 500 gr. spaghetti MISKO Νο 2
    • 1/3 cup virgin olive oil ALTIS / SOLON / ELANTHI
    • 4 peppers from Florina
    • 1 eggplant
    • 2 dry onions
    • 2 gloves garlic
    • 2 tablespoons balsamic vinegar KALAMATA PAPADIMITRIOU
    • 2 packages chopped tomatoes
    • 300 gr. grated feta cheese «ΔΙΒΑΝΗ»
    • fresh chopped spearmint
    • fresh chopped basil
    • salt
    • fresh pepper 

    Directions

    Heat the olive oil and sauté the onion, the peppers and the eggplant for 4´-5'. Add the salt to soften the vegetables. Stir regularly.Pour the balsamic cream KALAMATA PAPADIMITRIOU and add the tomato. Cover and simmer for 20 '. Add pepper using pepper mill and sprinkle with the herbs.Boil the pasta in salted water. Drain and place on a platter. Drizzle with sauce and sprinkle with feta cheese «ΔΙΒΑΝΗ».Finally sprinkle with some olive oil and serve immediately.
