SUMMER OMELET WITH FETA CHEESE AND CHEDDAR

Ingredients

  • 8 eggs
  • 100 gr. feta cheese «ΔΙΒΑΝΗ»
  • 100 gr. cheddar «ΔΙΒΑΝΗ»
  • 1 sausage
  • 1/4 cup excellent virgin olive oil ALTIS / SOLON / ELANTHI
  • 3 boiled potatoes
  • 3 pumpkins
  • 1 onion
  • 1 red pepper
  • salt - pepper
  • some fresh thyme
  • some fresh mint
  • 2 tablespoons breadcrumbs
  • olive oil ALTIS

Directions

Preheat the oven at 170°. Pour oil over a mixed ovenproof dish. Sprinkle with breadcrumbs.
Heat the olive oil and sauté the vegetables stirring until soften. Add the sausages.

In a bowl, beat the eggs with salt, pepper and spices. Add the sautéed vegetables, feta cheese and cheddar in cubes.
Pour over the dish and bake for about 35 ', until the omelet is stabilized. Serve with green salad.
