    SWEET KOLOKITHOPITA MITILINIS IN ROLLS

    Ingredients

    • 4 pieces “kozanitiko kichi fillo”
    •  1 cup melted “fitini”
    • 1-1/2 kg yellow chopped zucchini
    • 1/2 cup rice soupe (glasse)
    • 1 cup sugar
    • 1 tablespoon cinnamon
    • 1 -1/2 cup chopped walnuts
    • 1 cup raisings, brown and blonde
    • 1 tablespoon dry grated mint
    • powdered sugar and cinnamon

    Directions

    Peel the zucchini, remove the seeds, the fibers and the husks and chop into pieces. Put 3 tablespoons of “fitini” in a deep frying pan. Stir the zucchini until it softens up. Remove it from the heat. Add the rice, the sugar, the cinnamon, the walnuts, the raisings and the mint. Mix them very well. Spread a “fillo” on the counter and put the stuffing on top. Wrap it in a roll. Place the roll on a pan with the loose ends facing downwards. When all the rolls are prepared, coat them with “fitini” and bake them for 30´ until they turn brown. Serve with powdered sugar and cinnamon.

    Program
