  • 2 sausages
  • 2 potatoes
  • 1/3 cup olive oil
  • 6 eggs
  • salt, pepper
  • crumbled dried mint
  • 150 gr. goat cheese


Cut the sausages and the potato into thin slices. In a pan with oil, sauté them in low heat, until the potatoes are soften up. Use a bowl and beat the eggs with the salt, the pepper, the mint and the cheese of your choice. Pour the egg mixture into the pan and spread it all over. Braise the “froutalia” for 6’-7’, tip it over and continue with the roasting until it turns brown both sides. If you want, you can bake it in the oven.
